Pressure Machines
Pressure machines force water through ground coffee by utilising the pressure of steam created by boiling water in a chamber. The steam can also be used to froth milk, although the steam produced by this pressure system is less controlled and consistent than that produced by a pump system. Also, the water used in this system is boiling – too hot for an ‘authentic’ espresso…
Pump Machines
Pump machines heat the water to 85-90°c – the temperature needed to create a ‘true’ espresso. Traditionally, water was forced through the ground coffee using a manual pump system, although now most feature an electric pump. The pump pressure is important, not only for producing a smooth, quick espresso, but also for producing a sustained, controlled jet of steam for frothing milk. As a rule, the higher the ‘bar’ the better, 15bar is more than enough pressure to produce a superb espresso.
