May is a wonderful month for cooks with asparagus at its peak, plenty of fresh green vegetables and salads and fabulous seafood such as lobster and crab. Vegetables to make the most of at the moment include broad beans, new season baby carrots, Jersey Royal potatoes, spring greens, spring onions and spinach. Early English strawberries come into season towards the end of the month and don't forget - now is the best time of year to enjoy wonderful Welsh spring lamb.
